View Full Version : Rosemary, Bacon and Onion Potatoes

Here's an easy potato side I came up with that you can quickly throw together to cook on your grill or in your smoker or even...the oven.

This particular batch was done on the grill last night.

This is plenty for 2 people:

2 baking size potatoes, cut (I like large dices)
1 onion sliced or chopped
Salt to taste
Pepper to taste
Rosemary to taste
Bacon, pre-cooked a bit and chopped
Oil or butter

Add potatoes and onion to a pan and coat good with the oil or butter of your choice. I have used both before and think I like butter or EVOO best.

Add salt, pepper and rosemary and mix all together. Add bacon to the top, and cover with foil for the cook.

These are ready to be covered with foil. I usually have more bacon in this dish, but only had a few pieces last night. Can't believe I was that low on bacon :crazy:

It usually takes these 30-45 minutes, depending on how well you like your potatoes done. Be sure to shake your pan some so they don't stick, and rotate it several times while it is cooking.

Here they are plated with pork chops from the grill and green beans, too (not pictured). They were very yummy. The bacon, onion and rosemary really add some great flavors and I love how the bacon gets so crispy.

Well Thanks Becky... This worked well for me...Used green onions instead of regular onions...And fixed it in the...Im sorry...the oven...
Oh wait...thats OK for side dishes isnt it?

looks like another one of your typical do again "dam thats good stuff" dishes!!! thks for sharing Beck... its on the list for shure! :thumb:

you can do only so much of scalloped or twice smoked taters, dutches beans, etc... a new side is always good to have in the arsenal to make a meal complete. and this one is versatile, like Craig said, worked in the oven too. gotta make sure that dang thing works every now and then too...
