I've used the Mad Hunky rub for seasoning a number of things, but haven't really had the chance to try it on meat. (Got some ribs in the freezer, if I ever find the time to do them.) Had chicken breasts on sale. So last night I dusted five of them with a healthy dose of Mad Hunky. Onto the grill. A couple of them found a hot spot and got a litte charred so I coated them with some cherry chipotle bbq sauce and made them dinner. The other three I left off the sauce, for another idea. They were very tasty. A definite do again. Would like to try it with the Sweet Baby Ray's that Fishawn goes on about.
For dessert I grilled some pineapple chunks, basted with a 50/50 mixture of honey and sriracha sauce. Been dying to try this. Oh man, were these good. Next time I'm thinking a couple of rings, hot off the grill over some vanilla ice cream. Maybe a little less sriracha, but it would make an awesome summer treat. Thanks for checking it out.
