  • Vertical Smoker Project

    OK… I have a pile of used and scrap 1/8” aluminum sheet metal and aluminum angle. So I thought I would try my hand at building a vertical smoker. Now to be honest I have never used a vertical smoker or really looked closely at one. So I’m going to have to take a field trip to a few stores to get some ideas. And maybe you guys could offer some input along the way. I’m not sure what kind of heat source I’m gonna use any suggestions ? Right now thinking propane. Aluminum is probably not the best material to use but it’s all I got and it’s FREE. I would like to be able to use it for cold smokes and to make jerky also.



    I’m going to have room for 11 cooking racks. They will be 23” W x 23.5 D framed with ½” steel tubing covered with expanded metal. I didn’t actually plan this size for the racks it was dictated by materials on hand. But I guess they will be large enough for most meats. The smoking chamber will be 44” high with 20” under it for the heat source and water pan. Both chambers will have it’s own door.



    Getting some insulation 1 ½ inches pink stuff.




    Got outside skin on it.


    Top on.


    Framing up doors used steel tubing for this.




    Skin ready for the doors.

    Dude, that is one serious smoker you are building. Don't forget about lower vents to help the draft and help control temps. I will be looking forward to seeing the rest of the build on this..

          Thanks Andy...

          Been thinking about the vents both intake and exhaust. Guess I really need to get a heat source first then decide where to install vents. Hope to get back to working on it hadn’t had much time lately.

            Nice project SixPack! No problems with aluminum.
            can't wait to see how it comes out..great start so far .

            Here's a link to mine if it will help at all. I put a firebox on mine and love it. Plus you get one at Lowes for $55, maybe an option for ya. I liked the firebox because its easy to add wood or charcoal without opening the door.

                Ifin yer wantin ta cold smoke with it, I'd go electric, but heavy duty electric fer when ya wanna hot smoke to. Can be done with the right controls. Also, fer cold smokin, I'd put a connector on there fer gettin yer smoke from a seperate source ta hep keep temps down.

                Great lookin smoker! Had a proofin box was gonna make inta a somker once, got hard up fer cash an dumb an sold it. That gonna make a swell smoker!

                    Nice job clean and professional looking , gives me some ideas I have the shell of an old coffee , hot chocolate machine . it has a steel cabinet now it looks like it will have a new life .

                        This is looking very nice. Your going to have plenty of space in this thing. Really looking forward to the progress. But lets get you started with one of these things points
