  • Ever tried citrus Gravlax?

    Just picked up some Salmon fillets to make Gravlax for Mother's day. I was thinking it might be nice to try to incorporate a mild citrus flavor in with the salt and dill this time. Has anyone ever tried this? I do not want to use lemon pepper salt as I am trying to stick with natural ingredients. I figured on adding fresh lemon zest in with the salt/sugar/dill mix. The thought of adding a squeeze of lemon juice came to mind but I do not want to cook the fish, and I don't want to make it sour or lemony, just add a mild flavor. Anyone ever try this or have thoughts/recommendations? Again, I don't want "Lemon Gravlax" just a mild flavor of citrus.

    Season with a small amount of fresh zest from whatever citrus fruit you choose. Do it before smoking, as it would be a stronger flavor if done after.

      yep my last batch had finely grated lemon zest mixed with the cure.

      Works a treat

      Just gives it that little lemony refreshing zing. but doesn't overpower.
      I used just i lemons worth of zest for about 3 lb of salmon fillet. seemed about right.
