  • Cinco De Mayo...

    Had the day off so I decided to play. First up was beans. They simmered all morning till tender. Later they will become refried beans.

    Sauted Onion


    Added beans.


    Cooked til done. Very tasty as is.


    Next was a pot of red. aka Beef simmered in red chiles.

    First soak red chiles in broth and puree.




    Brown beef in some oil.


    Add puree and simmer all day.


    On to some Tortillas.

    Make dough, form into balls and let rest.


    Cook in a dry saute pan.


    Once bubbly flip and cook til done. Store between sheets of parchment.


    Lastly I am cooking up some tamales.

    Make dough


    Stuff and form into tamales inside corn husks.


    Steam for an hour and a quarter.

      All of this grub looks delicious, Jeff. I should've headed to the west coast, instead of home to the east coast, today!

        Masa just had lard, salt, baking soda and chicken stock. Tamales were stuffed with pulled pork from my move in smoke.

                  My favorite comfort food is Messican and you just did me in! Those tortillas look so much better than those fall-apart ones I get from Wal Mart.

                    I did have too many cervesas, but I still managed to get a photo of the refried beans and a finished plate.

                    I was a little disappointed in the tamales. They were very dry. Maybe I should have added more liquid? Over all the flavors were great and the process of making the entire dish start to finish was fun.

                        fairy is playing silly buggers today but I'll see if she'll let you have some.

                        What's the tortilla dough recipe ? I got to give that a go !

                        And yeah kelly I remember rich's sink full of mayo too, lol

                          Some times to much lard will make the masa taste "dry" just something I have learned. Also if you really want it over the top use some broth from your meat next time for your masa and grind in a chile or 2...Your post has inspired me to make a messican feast soon...thx

                            I was wondering if maybe I did not add enough stock? Not sure how wet the dough should be.

                            I like the idea of adding some chile puree to it. A lil more salt next time as well.
