  • My Sunday Smoke Can you say CHEESE?

    A buddy of mine, wanted me to smoke some cheese for him. So i also picked up some for myself..........



    there is 3 lbs of Mozz., 2 lbs of meunster, 1 lb of provolone, monteray jack, swiss, hot pepper cheese colby jack, mild cheddar, and brie. Alos in that pic is some CB i made to send to my buddy.......

    the Brie was a challange, it has a wax like coating to it. This is how i got around it, but kept the coating so the brie wouldnt deform.



    I took a fork and scored the outter coating........both sides and the edge.

    smoked with maple ( my fav) and temps never got above 70


    let us not cry because we lost someone, but let us smile because we enjoyed their company for what time was allowed us!

    I love cheese, but have not attempted smoking any yet. How long did you smoke?

        1 hour to 1.5 hour for the white cheese........2 hours for yellow cheese, because its a bit harder.......

        but it really depends on how much smoke flavor you like.......its a personal preference.

          What temp must I stay below so it doesn't start to melt?

            ANY cold smoking should be done below 90 DEGREES !

            you know, the AMERCIAN temp standard.....!

                  I smoke for 2 hours - it differentiates my stuff from the dross you can buy in the shops.
                  Mine tastes SMOKED lol.

                  Wow that sure is aone mess of cheese you've got there, good smoking :-)

                        Dude, How did the Brie turn out?......Good call on scoring the skin, I was wondering how & what you were gonna do with it to get more smoke.

                        I love it, but have never had it smoked.

                          Fish.......no clue.......made it for a buddy.........when he gets it, he will tell me. It was in there bout 45 mintues before i remembered the rind!

                          if fact HE brought up the idea to ME, never thought about it being smoked!
