was at sams this weekend, nice big portabellas in a four pack-nice shape too, not all beat up etc. 3 bux and change. about 80 cents piece, thought that seemed like a decent price.
the stuffing, the diced mushroom stems, 2 med onions small chop, about the same amount of celery small chop, chopped parsley, worchester sauce-about 3-4 teaspoons. bacon and pepperoni.
brown the bacon reserving the drippings. remove bacon and set on paper towel to drain. add a couple tablespoons butter to the drippings and when hot add all the veggy material,sauce, and season with salt and pepper. when celery and onion is cooked thru add the bacon which is now pieced up, and combine.
i put the bella caps gill side down on the smoker for about an hour, brought them in and cut an X on the caap of each for drainage. made a foil pan which i pammed and set caps on. spooned the mixture into the caps. i put some pepperoni on some just to try it out.
doing some ribs at the same time, this pic is when the ribs coming outta foil.
