Picked up Cosco's version of beef short ribs Saturday. Not really ribs at all but they call them "boneless beef short ribs" and they do look tasty so I thought I'd give it a whirl.
I treated them as I would any other rib. Slathered with mustard and rubbed.
Then into the smoker @ 250 for about 3 hours mopped every 1/2 hour with bourbon and apple juice. You may notice on piece missing. The wife didn't want hers smoked so hers went into the "O" word.
Panned, foiled and back in for another 2 hours. Then sauced for another hour.
Made up some potato salad to go with it with the following ingredients.
Potatoes
Green onion
Fresh japs
Diced tomato
Mayo
Sour cream
Creamy Caesar dressing
Dijon mustard
CBP
Then fried up some nice U-15 shrimp to go with it.
The so called beef short ribs were tasty but really could have cooked a little longer. Not tough but not a tender as I would have liked. I haven't had any really good fried shrimp in a long time so that really hit the spot. Pretty good dinner all the way around.
