  • My next CB

    EDIT: moving all the pictures up front to make viewing easier.

    I asked for suggestions and got a few that I'm going to try. I have a few friends that have asked me to do some CB for them the next time I did it. So that just pushed me to get off my butt and go get some loins.



    After trimming the and cutting them up. I ended up with 9 sections

    2.2lbs, 1.14lbs, 2lbs, 2.8lbs, 1.15lbs, 2lbs, 2.9lbs, 2lbs, 3.1lbs.

    They were all cured with the same ingredients except 2.

    all ingredients are pr lb each.
    1TBS Morton TQ
    1tsp each Turbinado sugar, onion powder, garlic powder, sweet Spanish Paprika, CBP
    the other 2 inluded this but also 1tsp pr lb of Rich's Smitty's.

    The onion / garlic powder, and paprika comes from my local "hippie store" Good Foods Coop and is from Frontier natural product http://www.frontiercoop.com/.

    This was taken a day into the cure



    My plans -

    one of them will be using bb53chevpro's PAPRIKA recipe.
    one of them will be using Eman's molasses, brown sugar, Bourbon, and apple juice glaze. might have to go with 2.
    one of them will be using desertlites idea.
    spice from Frontier - apple pie spice, Cinnamon powder and injected with an apple juice.

    the 2 that used the smitty's. 1 will be recoated with smitty's and completely covered in CBP, the other just coated with CBP.

    The rest will just be rinsed and smoked.

    Day 5 of the Cure


    Rinsed and Soaked, letting them air dry


    temps were bouncing between 225 and 250


    getting easier to pick out the glazed one.


    Here is the one covered in smitty's and CBP finished


    The one with the apple pie spice and cinnamon

    Of the 3 flavors I tried, I have to say the one with the CBP and Smitty's is my favorite. It has a really nice kick to it.

    The glazed is ok, gives it a nice sweeter taste. but is sticky sticky sticky

    The apple pie one the verdict is still pending. made the mistake of eating several smitty first. You can taste the apple pie spice, just not sure it's enough. for right now, i'd just say that it isn't bad.


    I used zip lock bags in bagging these up because most 9 lbs of it will be going to different friends. Each bag holds 1 lb of CB



    some of the ends that I will be using for well I'll figure it out when I need to.


    These are just now going on ( about 3 minutes ago) some of what I trimmed after the cure. More goodness for recipes.

      I just picked up some TQ at the store yesterday thinking I would do some CB next time loins go on sale. I will be watching yours to see which you like best. Looking forward to the results.

        Awesome thread, Kevin!! This looks like quite the experiment to monitor as I'm sure they'll all be tasty. What better place to get a one-stop shop to review CB recipes from other seasoned CB makers!!!

        I'm running into some issues getting the Morton's TenderQuick. Need to try a few specialty shops around town to see if they might have some.

                            You're doing all that AFTER they're cured and before you smoke 'em ?

                            Have to admit I'd just smoke em lol

                              CA, yeah thought I'd try a few different kinds this go around. Not convinced that the apple spiced one will be all that but who knows. I have enough to play.
