  • CA's Honey, mustard, egg & chive potato salad !

    Something a little different today.
Just a potato salad - but a damn fine mix :-)

Also for you folk on the healthy gig - this recipe works great with light mayo.
Due to all the flavours the mayo isn't a major player flavour wise. So even if you think it tastes like crap - you can still use it

Now I always use tinned new potatos for this. Over here these are seriously cheap, the big tins I get for about $0.40
When i was over in wyoming 2007 I could only find very small tins in wallmart and they were stupidly expensive - over a buck a tin.
Hopefully that's changed, if not - use whatever potatos you usually use :-)

This recipe makes enough for 3 hungry people.
Easy to scale up for more.

Mix gently but well, and it's ready to eat....

    Enjoy

Thanks CA. Last weekend I made some corned beef hash using some canned potatoe I took from my dads place. I told my wife there are a couple cans left and if we need a salad in a hurry maybe we should try them. So I save your recipe just for that.

Nice CA. Love chives in potato salad. Honey mustard makes for a nice change too.

I've used the canned taters in stews or hash, but not salad. Usually when camping. Sure makes things a lot easier.

I know I have seen them in cans but not sure on the price.
Anyone who can't find them or even if you can and they are pricy could always check the price on a bag of new pots and boil 'em up yourselves.

Looks like a great and mighty tasty recipe!
Gonna bookmark this and maybe give it a whirl on Memorial Day

The advantage of the tinned/canned ones is simply that I'm crap at boiling veggies. Just never really got the hang of it - that's why they invented microwave ovens :-)

Plus it saves you boiling, rinsing and waiting till the potatoes get cold and firm up.

And like I said - over here these are so cheap, it's really not worth doing it yourself :-)

a 2 tin batch will do for 6-7 people (I mean there's always garlic bread and umpteen other bbq'd goodies as well)
