Well we got a hog from a guy for moving a mobile home for him. He was a little short and we got it rather cheap. The other day we picked it up at the butcher and I cooked some bacon for lunch. Thin skinny but real lean. God that had to be the best back I have every had. Crispy but not hard and it had just the right salt and smoke.

I just hope I do that good when I make it

The ham is thawing now figure it should be ready by wensday. Kind of small but looks real lean. Figure this weekend or next week I might smoke some chops or do the spare ribs. They cut the ribs up kind of small for some reason. But should be ok in the smoker. I am thinking about buying one whole and cutting it up myself so I can do everything my way.
