  • My first briskets

    Some husbands bring home flowers. Mine brings home meat.

    Dan came home with two briskets the other day. They are both just under 4 lbs. I thought about searing one of them, but the propane tank is empty and the other one is buried in the garage somewhere.

    So, instead I decided to do one with mustard and rub, the other one just has rub on it.

    Fat side:


    Other side:


    Top one has mustard and rub, bottom one without mustard:


    I'm smoking them with mesquite to start and finishing with oak at about 230o.

          Wise guy. We don't have a dog and the neighbor's dog is inside their house for the day.

              Looks like a plan, what did ya rub them with. It won't hurt a thing if you want to smoke them hotter, say 245-250!

              Hope the smoke treats the briskets well.

                I used Jeff's rub with a little extra heat. I'm using your brisket mop when it's time. I'll see how they're doing in a couple more hours. I'm in no hurry. If they're done in time for dinner, that's great. If not, I've got a backup plan in place already.

                    sounds like a good combo, I have never used Jeff's rub on beef, should be good.

                        Update



                        The one on the bottom is at 165 and the one on top is at 156. It smells really good outside.
