Happy birthday, Aimee! At those prices, I just gave my brother $200.00 worth of elk to take back to Michigan with him. We mix ours with beef fat for flavor. Looks like a good time.

I believe my father in law sells ground buffalo for $3.50 a pound and that is 100% buffalo. For retail stores and restaurants to sell buffalo legally, USDA requires 5% beef fat is added.
Low adn slow is the only way to prepare ground buffalo in my opinion. We make it on our Holland grill which runs 325º to 340º and their is no open flame. I wouldn't suggest buffalo or elk burger over hot coals.
An interesting fact is that buffalo is the only mammal never to have cancer, it is the healthy red meat.

i've had real elk & buffalo self shot.
this was gander mtn. crap from michigan & i didn't season it @ all- to get the real taste. you could tell it was commercial.
when i go to alaska here in a few weeks...
