Well I'll be damned, if I haven't been seeing some calzone cuisine floating around our smokin' lounge here. Got me plumb stir crazy for some of that buisness
WFO fired 2 hours prior to pushing the embers to the rear of the oven. Looking at a 700° to 750° working temp.
We made eight of these with the dough from a pizzeria in town. All different styles. Kids jump in and get involved.
rolled out into 10 inch pies. Apply the goods to one side and fold over. pinch edges together with the backside of a fork.
Took about four minutes to cook each oven load of calzones.
Good thing the 16 year old doesn't have much hair on his face. 'cause there would be some missing after this shot!
Got to keep turning the calzones in circles to try for an even cook and not to burn the heck out of it.
calzone right out of the oven. There is some superficial char. It is almost impossible not to get any. I enjoy a certain amount of char, it provides flavor. IMHO
Honky's Homemade chorizo sausage, Pulled pork, onions, 'shrooms, and cheese.
Pepperoni and pineapple, Onions, 'shrooms, fresh tomatos and cheese.

The evening setting. Makes for a late supper, when the sun is this far down. But the temps cool down and the ambiance of the WFO fire is beautiful and so is the sun setting.
