Today I made up some Jambalaya out of the Andouille I posted yesterday.I picked what sounded good out of some recipes online.And then added the obligatory green onions and cilantro.It was VERY spicy with the cayenne in the Andouille and what I added it was a little too much.The skin under my lower eyelids was sweatingI normally use a Cajun's choice seasoning pack and it has been good for years.But today I wanted to own it so here it is.Sorry about the no beer in the pic fish I was using it to cool off my lower eyelids.Thanks for looking.Normally I would add a lb. of shrimp but I'm sure if I had I would have had a Fred Flinstone toe in a couple of days.Fricken Gout
