Instant butterscotch sauce

  • Instant butterscotch sauce

    Well I say instant - takes about 1 minute :-)
    So get your bowl of icecream ready BEFORE you make this.

    You will need:
    1 coffee mug.
    1 microwave (mines 950 watts adjust times accordingly).
    1 teaspoon
    brown sugar
    butter
    golden syrup (no idea what you guys call it - sorry) OR thick pancake syrup or HONEY.
    vanilla essence

    Very very simple.
    For one person into the mug put:
    1 tsp golden syrup
    1 tsp butter
    1 tsp brown sugar
    1 drop vanilla essence.

    Microwave on high for 20 seconds - stir.
    Microwave on high for another 20-30 seconds (depends how chewy you like it).
    Pour over icecream and enjoy

    I haven't made it in a larger amount yet, but given the ingredients if you double the amount, increase cooking time by 50% (not 100%)

    For maple butterscotch just add 1 tsp maple syrup to the other ingredients or use maple sugar instead of brown sugar (don't substitute maple syrup for golden syrup - very different products)

    I had some icecream the other night and wanted some butterscotch sauce. This is what I came up with :-)
    Used it a few times since - it's so quick and simple there's never any excuse for not having hot butterscotch sauce on your icecream :-)

    Sounds good, but I don't think the Golden syrup is available in North America with the exception of Lousiana and parts of Canada. I guess it's used in Cajun Cuisine.
    If anybody knows where to get it, let us know...I'd like to try that.

      spose you could try it with maple syrup - use 2 tsp, I can't cos I haven't got any at the moment :-)
      Dunno if there's a beaver problem in the maple groves up there in mountie land or what but the stuffs got amazingly expensive over here recently.

      Next costco visit I'll get a bank loan and buy a big bottle - expensive as it is, it's still half the price of ms in the supermarket.

      Don't you have any invert sugar syrup over there ?

      man I just couldn't think of not having golden syrup.

        Right - got a solution to the golden syrup thing.
        Was wandering around aldi today and they had some american pancake syrups in - good and thick.

        Thick glucose syrup based concoctions in various flavours.
        It's not exactly the same but should work well as a substitute.
        Glucose syrup has similiar properties to golden syrup, so a glucose syrup based mix ought to do the job :-)

            Golden Syrup substitute

            Here is what i found for us non Canadian/Britts/cajuns that are interested in this stuff...havent tried it yet so dont blame me if it sucks.

            Golden Syrup
            Substitute for Lyle's Golden Syrup

            Put 1/4 cup sugar in a small heavy saucepan
            and shake pan so the sugar is in an even layer.
            Sprinkle it with 1/2 tsp vinegar and 1 tsp water.
            Cook over low heat, without stirring, for 5 minutes.
            Increase heat to medium and cook until syrup has taken on a
            light caramel colour, 5 to 6 minutes.
            Immediately remove from heat and pour in 1/3 cup light corn syrup.
            Do not stir, but let it bubble for 2 to 3 minutes.
            When the bubbling stops, stir well.
            It can be stored at room temperature for several months.

            C.A. would i be correct in assuming that vanilla essence is the same thing as vanilla extract?

              yep :-)
              Basically don't use Vanilla Flavour. Always go for the natural stuff. But for the folks on here i suspect that'sa given anyway :-)
              Soon as we get some more icecream I'll post pics making this. Might do a video - it's that quick :-)

                Mmmm golden syrup. Haven't had that in years. My mom's Dutch and every so often we'd get our hands on it, good stuff!

                Hmmm... probably the best source for finding it in the states would be to look online for stores that import european foods.

                For example: here's one out of San Fran that sells it.

                or if you have a local import store see if they have it there. I'm going to hit up the local dutch/american import store and see if they have any.

                Hmmm... maybe I'll have to whip up a batch and tell ya if it's close. Though it's been quite a few years since I've had it, the taste is pretty well burned into my flavor memory.

                  still not found any corn syrup.
                  Given that 70% of the sugar used in the uk is from home grown sugar beet - and most maize is grown for cattle feed.
                  We just don't use corn syrup for anything. Probably don't even make it.

                  But like I said a thick glucose syrup based pancake syrup would do the trick.
                  Basically glucose syrup is the same stuff just made from glucose not sucrose.

                    Problem solved - and so simple can't think why i didn't try it earlier :-)

                    use honey instead of golden syrup.
                    It gives exactly the same result just with a very mild honey flavour. The dominant flavour is still the butter and vanilla.
                    Cooks the same, looks the same and is just as good on icecream :-)

                    So alternate recipe is simply;

                    Very very simple.
                    For one person into the mug put:

                    1 tsp butter
                    1 tsp brown sugar
                    1 drop vanilla essence.

                    Nuke on high for 20 seconds, stir well and nuke for further 20 seconds - pour over icecream :-)

                        Just had the wife make a single batch. It's very good. She just dumped the rest in her coffee though.

                            oh yeah and you can use smoked honey as well

                            i do try and use smoked ingredients in things where possible ;-)
