  • HUGE Turkey smoke

    Did this last year for my moms 75th birthday


    here is the monster in the cryo-pac......just under 19 pounds



    the brine.......molasses based, with half the salt. I soaked the bird for a couple days to try and remove most of the factory brine, hence half the salt. I did last turkey day turkey this way and it was out of this world. I also injected this bird with the brine, like the last one.



    outta the brine, and draining. you can see where the brine colored the skin brownish



    sittin pretty, on a 40 oz bean can. Thankx smokin steve for the idea, so i wouldn't have to split this bad boy. you can also see where the turkey rested up against the cooler. It didn't get the color



    here it is, sitting in the smoker. I dusted it with corn startch, from a idea of CinnamonKC, thankx for the idea. we will see if it helps with crisping up the skin.



    outside temps are 46. cloudy, with lite sprinkles.......fingers crossed

    3 hours in......internals 150 smoker temps 250-275




    okay........just pulled it, its resting now this took about 5.5 hours total



    when i pulled it off, the skin slid up as you can see in this pic



    was a great smoke, and enjoyed by all

          There she is!!! That's the bird I refer everyone to when they ask about doing turkey's over 16 lbs. It was massive in size and looked as if it cooked evenly resulting in a gorgeous color by the time it was done.

          Thanks for posting this one again, Dude. It's definitely a goodie!

              thankx, for letting me know i missed stating that, i fixed the problem.......250-275 smoked with cherry and apple. Now at these temps the skin will be rubbery.........if you have a grill, you can put the bird on there after its done on the smoker, at temps at 350-400, will get your skin crispy

                      i STILL don't know wtf a GIG is.........but molassess was part of the brine
