I made some bacon about a week ago and one slab was less than stellar in the taste department.
Wondered how it would be if I used it for some Pig Candy.
Test run
3/4 pound of bacon
1/3 cup Brown Splenda (Dad's diabetic and wanted him to try it)
2 tsp Mad Hunky
1 tsp Cayenne
Smoked @250 degrees with a chunk of hickory for 2 hours
Managed to get a strip in plastic wrap and put in the fridge for Dad.
I took three of us less than a minute to devour the rest....WOW, was that good!!!
Next time I'll use regular brown sugar (splenda is fine for long cooks, but for a 2 hour smoke it had an after taste to it) and a lot more bacon!!
