Mrs. Gunslinger's Jalapeņo Hot Dog Relish

  • Mrs. Gunslinger's Jalapeņo Hot Dog Relish

    This stuff is killer.

    Ingredients

    4 lbs jalapeņo peppers seeded and cored if you must, but a real man would use the whole pepper
    5 large white onions
    1 large red bell pepper
    3 Cups white vinegar
    1 Cup water
    3 cups sugar
    3/4 teaspoon turmeric
    1 teaspoon dry mustard
    1 teaspoon celery seed
    1 teaspoon ground ginger
    1/4 to 1/2 cup flour

    Method
    1. Chop, grate, shred, or grind (we grind) jalapeņo peppers, onions, and sweet red pepper.
    2. Combine sugar, spices, 1/4 cup of the flour, vinegar, and water to large pot. Cook slowly until thick. Add vegetables and cook gently for 10 to 15 minutes. Stir constantly so mixture does not scorch. Adjust thickness to your liking. If to thick and a little water and vinegar. If to thin, add a little flour to water and stir into mixture.
    3. Ladle into hot sterilized jars leaving 1/2 inch head space.
    4. Process in boiling water bath for 10 minutes.

    Makes about 4 quarts

        with the garden really starting to produce... and jalapenos really having a bumper crop so far i gonna make some of this. thks for sharing buddy. keep them cannin recipies coming!!!!

          Thanks Gunny. Saved both of these. This sounds great. I'll be trying this for sure.

          My jalapenos are having a great year too. They took a beating in Saturday's storm. Might lose one, but hope not.

                              Hey Tom,

                              I'm going to make some of this in the next couple of evenings. Like your idea of grinding. I'm assuming a large holed plate. Would think you get a lot of liquid when doing it this way. Do you add it too, and does it affect the end product? Once it's done and canned, do you need to leave it sit for a while? Seems almost like pickling.

                              Sorry for all the questions. Can't wait to try this. Have some all beef, natural cased weiners in the freezer, just begging me to make this. Hehe.
