    These things are FANTASTIC and I was requested to make them again this weekend.
    They're so good I had to post here. Hope LisaCSCO doesn't mind.
    Also, thanks to the Marlboro smokers for the recipe. I friggin hate ciggies, but a good stogie now and then :)

    I've added some notes too.

    EGGS IN POTATO HOLLOWS SERVES 8 COOK TIME 30 MIN

    4 cups cold mashed potatoes ( 8 servings Idahoan Boxed )
    1/2 cup crumbled crisp bacon or diced ham ( half pound cooked bacon, cooled, cut up )
    1/4 cup minced or grated onion
    1/4 cup chopped fresh herbs, optional (tarragon, dill, parsley, etc)...( I like green onion)
    1/2 t. black pepper
    Bacon fat or butter
    1/2 cup dry bread crumbs (or sub out Corn Meal )
    8 eggs
    1 cup shredded cheese (Cheddar, Jack, etc) 4 oz Shredded Cheese (Vman Optional)
    I also added Several PRESSED Cloves of GARLIC

    Combine mashed potatoes, bacon, onion, herbs and pepper, stirring until well mixed.

    Grease a shallow baking pan (I put mine in a cast iron skillet, makes for a nice cooker and server) with bacon fat. Sprinkle with bread crumbs. I USED PAM

    Spoon 8 mounds of potato mixture onto pan (1/2 Cup Each).
    With back of spoon, make deep depressions large enough to contain eggs in the potatoes.

    Bake in a 450 oven for 10 minutes or until potatoes are hot.

    Reduce heat to 350. Drop eggs into potato hollows. Bake for 20 minutes or until eggs are set.

    Sprinkle with cheese. Return to oven for a few minutes until cheese melts and eggs are done.


    *This recipe comes from a cookbook that Marlboro sent you after saving up so many of those gold seals on thier packages. Someone gave this and one other cookbook made by Marlboro. (I dont smoke ). These 2 cookbooks are really great! I'll try and post more from them.

    VMANS NOTES: ********* For 8 Servings

    In a 1 ½ - 2 QT Pot put in [The end result will be appx 1 QT of cooked Mashed Taters]

    FOR THE POTATOES:

    2 2/3 C Water
    1 Tsp Salt
    4 TBSP Butter (or Margarine which is actually recommended) it’s a HALF STICK

    Bring to a Boil, REMOVE from heat and ADD:

    1 C COLD Milk
    2 2/3 C Idahoan Potato Flakes

    STIR GENTLY, DO NOT WHIP!


    For the Bacon:
    Bacon, raw 1 lb 15 to 25 slices
    Bacon, cooked 8 slices 1/2 cup crumbled
    Bacon, cooked 1 lb 85 to 95 slices

    For the Bacon See above chart to determine what you are dealing with.
    But in truth it really tells you nothing when it comes to the middle one.
    8 Slices of 15 is WAY different than 8 slices of 25 count.

    This first round here I’m using Patrick Cudahy Sweet Apple-Wood Smoked Bacon
    14 Slices to one pound (454g)

    Cook Bacon, Remove to paper towel lined plate.

    ½ Cup Cooked Crisp Bacon in this Try took 6-7 Slices of cool crisp cooked bacon
    SO it’s a HALF POUND of Cooked Dried Crisp Bacon Diced up for 8 Servings

    BACON GREASE – The grease from one pound of bacon poured from pan into a Gravy Boat placed on the cold part of the stovetop. Will cool in about ½ hour then pour into a ramekin and freeze. It fills one ramekin ¾ - 7/8 full. Freeze and use for recipe. Clarified with no chunks as it were.
    WANNA DO IT EASY? USE PAM !


    ¼ Cup of Fresh Chopped Herbs:
    I’m used GREEN ONIONS, Basil, Parsley, Chives, Dill and ( very sparingly) Rosemary.

    ¼ Cup Minced Onion – I’m gonna use Sweet White
    4 cloves PRESSED Garlic
    1 Tsp Black Pepper

    MIX ALL INGREDIENTS IN BOWL
    Spray Cast Iron Pan w PAM
    Sprinkle on CORN MEAL
    Form Patties, MAKE WELLS, and begin cooking.

    They’re rich enough without the cheese

    The above made 7 so I guess it’s Seven or I need to make more taters.

    450 for 10 minutes
    REDUCE HEAT TO 350
    Add Eggs to wells and cook
    20 Minutes at 350
