Hey gang,

The MES has been kicking ass, but I haven't done anything "new" to post in a while. You know, shoulders, loins, ribs, chicken, etc. Saturday, however, I pulled off what was probably the most incredible hunk of smoked heaven yet.

2 lbs of Johnsonville Brat, rolled and stuffed with 1/4 pound of cheese, 6 White Castle Cheeseburgers, 4 grilled Vidalia Onions. Then wrapped in a weave of over 1 lb of bacon and smoked with hickory and maple. Individual "slabs" served "burger style" on a cheap white bun.

Ho. Lee. Chit.

My boys aren't much on leftovers, but they stuffed themselves stupid at dinner on Saturday and had every last crumb polished off by lunch on Sunday.

Wow, was it good. For the record, I used a 6 pack of frozen White Castle cheeseburgers I got from the grocery store. Fresh would be awesome, or the slider of your choice could be substituted.

OK...now THAT is poi-nts worthy! I take alot of ribbing for professing to be a cook that cares- and loving White Castles... but I don't give a crap! I LOVE those things!

There's no shame in lovin' White Castles! You're right, you've got to taste it to believe it. Unreal. :)

I'll take pics of the next one (because there WILL be a next one) but the assembly is rather easy.

1. Roll out the (brat) sausage in the ziploc bag, then slit it open.

2. Lay down 3 sliders, right next to each other end-to-end, centered on the sausage. (Sliders like this ¤¤¤ )

3. After grilling up a mess of onions, layer them on top of those 3 sliders.

4. Stack the next three sliders right on top of the first 3 (so the onions are between them). Press them down to flatten the stack out a bit so it's easier to roll up.

5. Put some hunks of the cheese of your choice up and down bot sides of your strip of sliders; put as much in as you think will fit.

6. Roll it up, wrap with bacon, and let 'er rip!

Best fatty I've had yet; don't know if I can top this one. :)

I can't emphasize enough how damn good this thing is. Like Holy Crap!

You know, we were commenting on part of the "why" it's so good as we stuffed ourselves at the table. It's some VERY yummy things (White Castles, cheese, onions, bacon, and brat) that when you eat it on the sandwich you don't get it ALL at once, you get a different twist every bite and it's ALL GREAT!

I mean DAMN!!!!!!!!!!!!!!!!!!!!!!!

Here's some pics. I took one before I rolled it up (refer to the description in my post above for details, but this is what it looks like)

I used Extra Sharp Smoked Cheddar last night. 8 oz package chunked up.

Here it is after a couple of hours with a Maple/Hickory blend (perfect wood choice for this thing. Just go about 50/50. Awesome!)

and plated. I put a *little* ketchup and mustard on mine; my middle boy likes it with a little SBR BBQ sauce; my oldest puts a dollup of the mac-n-cheese on the sandwich. Whatever. There ain't much talking and a whole lot of eating going on, that's for sure.

But what are the little round black things under the burgers - kinda look like olives but no olives mentioned in the ingredient list :noidea:

But that is just one amazing fatty - have some more poi-nts :banana_smiley:

I would never have thought anyone would find a way to make those horrible prepacked burger things edible lol

Those are the fried onions. :whistle:

I chop 'em up real fine or run 'em through the food processor, then I fry them in a 12" skillet in about 1/2" of vegetable oil for about 1/2 hour to get 'em good and tender and reduced. About halfway through the "frying" process, I pour in a good dose of Dale's seasoning:

It's what gives the onions that dark color and a real rich flavor. I pour it right into the oil and onions and stir it real good. The frying process steams out most of the water and concentrates the goods right to the onions. Hot damn, they're good. Tastes kinda like concentrated French Onion Soup.

I don't know how I could have possibly missed this thread, but...:hail::hail::hail:.

I have to work on Thankgiving Day, but am off the day before. I was planning on smoking some stuff to take to work for the fellas, and this my friend just made the top of the list!

I think I'll make two, one with the regular sliders and one with the jalapeno cheese!

BTW... I love Dale's seasoning. I use it a lot. Good with shrooms w/ unyuns.

White Castle! :thumb: Boy does that bring back memories. In High School, on weekends we'd go over to Cocoa Beach to surf. There was a White Castle there, you could bet a bag of 10 for a buck - yea $1. We'd surf till ten then WC, surf till 2 and WC, surf till dark and - you got WC! three meals a day for $3. Then back to the beach South of Patrick's, sleep on the beach and repeat! Goood times.

It's about time I made another one of these (I've lost count - we LOVE this one!!!)

The recipe has evolved just a wee bit; I've settled on a cheese of choice when making this one. Don't Laugh - Velveeta. :faint: :bounce:
