View Full Version : Rice Pudding for Smokin Lee

We top ours with lingonberries.
RICE PUDDING (The Velek Recipe Handed Down)
½ Cup Uncooked Rice
4 Eggs
½ Cup Sugar
1 Tsp. Salt
1 Tsp. Vanilla
2 Cups Milk
1 Can Evaporated Milk (12 oz)
Cook Rice to Package Directions.
Scald Milk. (Put in Micro Till HOT)
Beat the Eggs Slightly.
Add Sugar, Salt and Vanilla to Eggs.
Add Rice to the Milk.
Add To Egg Mixture.
Pour into LIGHTLY Buttered Casserole Dish.
Set Casserole Dish into a Large Cooking Pan with
About 1 ½ - 2 inches of HOT Water in it.
Bake at 285’ for 2 Hours.
Till Knife stuck into the center comes out CLEAN.
Cool in Fridge.
Sprinkle Cinnamon over the top for “garnish”
Lingon Berries : RECOMMENDED – Midnight Sun – Wild Swedish Lingon Berries –Stirred with Sugar – Produced by – “Ornas Produkter AB” – Kungsangen, Sweden
Oh and P.S. we ALWAYS double or triple this recipe.

You must of read the post about my gradmas rice pudding that the recipe was incomplete. She was german and my grandad was swedish, he grew up in Minn. She called him Olie. LOL. Now as far as those berries, I will have to look for those, I don't recall seein them in the produce section while lookin at all the other different things they carry now.

The brand I specified is about $8 for a 12 oz jar. Somethin like that.
They come from the arctic circle.
HIGHLY RECOMMENDED.
And yeah, I did read that post. I think it was Travs Molasses Pie.
This recipe is always a hit. BIG TIME.
The lingonberries are hard to find.
In Minnesota it's only the Swedish Institute, HIGH end Grocery stores and sometimes it's just seasonal around Christmas. They can be very tough to find but WELL worth the effort.

Man, that woman could cook.

My grandma used alot of currents in her desserts, so may just substitute those till I can locate the berries. Thanks again.

Interesting call on your part.
Let me know if you do the currants and your thoughts.
What I'm referring to is rather like a jam with berry chunks in it and lingonberries are the size of currants.

It's good and it's easy.
You can also use nutmeg instead of cinnamon to sprinkle on the finished product. (before lingonberries if you use em)
