    Before Cukes washed and ready

    the recipe

    Bread and Butter Pickles

    12 cucumbers (6 quart basket)
    2 Lrg. onions
    Slice cucumbers and onions ¼ inch thick Sprinkle with salt.
    Let stand two hours- Drain
    3 cups vinegar
    3 cups sugar
    1 tsp. celery seed
    3 Tbs. mustard seed
    1tsp. Turmeric
    Put in kettle and dissolve. Add drained cucumbers and onion. Cook until almost boiling. Put in sterile jars and seal.
    Yield 6- 500ml. jars


    green beans After



    Seasoned Green Beans

    Frenched beans to fill 28 oz can
    1 Tbsp onion chopped fine
    1 tsp red pepper chopped fine
    1/8 tsp garlic powder
    1 tsp salt

    Fill can with beans to 1`” from top add onion,pepper garlic and salt.
    Fill with boiling water to ½’’ from top. Remove air bubbles seal lid
    Process at 10 lbs for 20 min.

    Cool! How do you seal the lid on a can? When we pressure canned beans etc. we used jars... Just wondering...

      I have a canning machine and it roll crimps the lid on the can just like a store bought can.

          You won't find cans on the store shelves but there are companies that sell them. I get mine from Dominion and Grimm out of Montreal.

                  WOW, that is really cool. Never seen an operation like that, heard about using cans, but never seen it.

                  That is one slick setup. How do you process them? You can't submerge them like a jar right? Or do you simply pour your very hot liquid in the can, no matter what it is your canning then add the lid and seal?

                    We fill the can with boiling water, put the lid on then roll crimp it, then the can goes into my pressure canner the same as you would do with a mason jar.

                        No sh*t, that is the coolest thing ever. Very professional looking. I have to look for one of them there set ups. Is there a place that you know of that deals in used equip like that?
