Looks Awesome and one of, if not my favorite meal

Question though, how were the shells, meaning very hard?

I have always understood that the shellls get very hard in warm months and soften up in the winter months. I always do boils in the winter, spring based on that. LA Crawfish Comp. is where I get them.

So, I'm very curious to hear your answer. Perhaps I'm missing out
