  • What temp for medium rare?

    About to put a rib roast on. I've never smoked one before. What temp should I smoke at and what temp to pull to get medium rare?

    Pull between 128 F and 133 F, tent with foil and rest for 20 to 30 minutes. It will hit MR perfectly. (Needs to be over 5 pounds for this to work.)

    Under #5 pounds run to 135 F to 140 F and pull then tent with foil

      bbally's got you covered. I do the same, pull them at 133 and let them rest.

                I always cook my Prime rib roast to 115-120º and let it rest for 30min.
