  • Apricot Stuffed Loin

    Got a couple of loins yesterday. One will be CB. The other was divided in to chops and a loin roast. I butterflied the roast, seasoned it with Jeff's rub, spread it with a 3 fruit spread that has apricots, peaches and passionfruit in it. Put a layer of apricots in the middle, rolled and tied it.



    It went in the smoker at 220 and is being smoked with maple. The spritz liquid is equal parts apricot necter and apple juice.

              Me too....I got one in the frig sliced open right now with ju-ju stuff all over it wrapped in saran. Un-decided what i'm gonna stuff it with, Icruzen has a good idea.

                Wow. It is a definite do again. The only thing I would do different is have a heavier hand with the rub. I let it sit for about 20 minutes before slicing and was glad I did. The dried apricots plumped up and were nice and juicy and nothing oozed out while I cut it. I took the pan juices, added some more fruit spread, heated it until it thickened and poured it over the loin.

                The neighbor's cat came and checked out the smoker while it was cooling. It's blurry because I was laughing too hard. He had just stuck his head inside the smoker a couple of seconds before the camera took the pic.

                            Makes me wish I was more of a "sweet" fan. I like apricots and loins... but on seperate parts of the plate. I bet the apricot tang was well infused thru the meat.

                            And yes, on a hunk like that don't be afraid of the rub. Especially that rather whimpy one you used
