    Threw on a 12 pound brisket at 9 am this morning. Went inside to make some coffee and give it a bit for the temps to climb before backing down the draft.

    Here is the tip. Make sure you have the cover on your chimney stack OFF. It works soooooo much better that way

    When I went out 30 minutes later after I set everything in, temp was at 100

    Dhooooo.

    I won't be doing that again.

    Been there, done that, got the T-shirt! It is amazing how much better the temps climb by opening up the chimney, isn't it?

      Man, I can't count the number of times that I have loaded up the vertical cabinet and went into the house...only to look out at the temp a bit later to find that the temp is way low...ONLY BECAUSE SOME DUMB-ASS FORGOT TO OPEN THE INTAKES FROM THE LAST SMOKE!

        Did the same thing last weekend. The bad thing was that I just did some sealing work on my UDS, so I knew that it was more airtight & would run lower temps.

        After watching my temps climb then drop like rock, I thought I had ruined my UDS!!!!!!

        Then I took the cap off.....

        Amazing how the temps rose.
