  • Boneless Beef Chuck Under Blade Roast

    Well its finished and down the pipes. Got this roast yesterday. Never done on like this. You may have seen my "Help Needed" thread. Here it is:
    This pick is of the cut of meat. Some nice marbling.

    Here it is all rubbed up and getting ready for the fridge. Used some McCormicks steak rub I had in the cabinet. It has a decent flavor. Nothing special.

    I seared it on the stove top before putting on the smoker.

    Here it is at 155* Moving along nicely. Sorry for the blur.

    Here are some onions getting ready to be sauteed. Added shrooms later.

    Here it is pulled after a hour and 15 minute rest. Nice and juicy.


    Here it is on a sammy plated. Had fried sweet tater fries and some au jus (spelling) made out of the drippings. The sammy was covered in mozz and had the sauteed shrooms and onions with some mayo. Gotta have my mayo.

    Thanks for checking out my q-view. I will do this again. Have to. It was buy one get one free.

    Nice chuckie Ganny... and you did just fine on the spelling LOL! Chucks are an often overlooked cut. When treated right, they are great!

      Ganny looks very good. Ya hit it on the head with this one. I love doing chucks for sammies. they are so much quicker than briskets. :-)

                  I remember your call for help. My guess is you got some help here!
                  Makes ya wonder sometimes don't it?

                    I am a dummy. Didnt realize that if I deleted the pics off photbucket then they would delete here. Forgot it was just a link. I will see if I can get them back up. Edit: Got them back up. Sorry guys.

                            Thanks for reposting. I love Chucks, I am gonna try to get a couple sub-primal chucks this week. They have em at my butcher for $1.99 a lb for angus choice. I hope to scrape enough cash together to get a clod and a roll, 15-22 lbs each.:ballchain:
