well i was gonna do twice baked taters but kept ripping the skin so i diced & mashed w/ skin on- added garlic,onion,& crumbled bacon.made tater cakes-breaded them w/ saltines or bread crumbs(tater patties),deep fry or pan fry(oh the fishing trip style),smoke them for 15-30- pouring the smoke to them, slap a sunny up or poached egg & cheese on top.. bed this on a d.o. drop biscuit............
