  • Bay wood - my new favourite

    We trimmed the bay tree last week.



    Got some nice sized branches and a bunch of smaller ones.
    And believe it or not the wood has the same aromatic oils in as the leaves.
    The smoke smells just like your burning the leaves. Gives a very definitely noticeable bay flavour to what's smoked.

    Cold smoked a bunch of pancetta monday - alas had temporarily lost the camera, cos it looked and tastes amazing.

    The smoke is mild but flavoured so you can pile it on a lot thicker than I would normally do with my usual woods (oak, apple, plum).

    Definitely my favourite wood for smoke to date

    ps. The plastic bags in the pic have offcutts of the apple and plum trees in.
    I only use the wood for smoke, not heat so there's enough wood there to last me some time :-)

      Glad you had a chance to use some... I guess if it seasoned any longer than it did, it would have gone bad and gave the meat a nasty flavor...

        Cool Alex...Wish I could grow bay around here...gotta grow it in a pot and bring it inside when it gets cold...
