Well, been pretty busy lately with painting the house and haven't been able to smoke a lot. So, I figured I'd do some experimenting as the Mrs and little ones were out of town.
Found a lb of calamari/squid in the freezer and decided to make something of it. I made a dry rub with chili powder, cayenne pepper powder, and coriander. Everything got rolled in it, good heat.
Also made a sauce consisting of lime juice, lizano salsa, honey, garlic paste and red peppers.
Put them on the grill at 400 degrees. I also wrapped a couple of bricks in tin foil and put those on top. Did each side for a minute and a half. Then, another minute without the brick. The tentacles on their own. So, after 4 and a half minutes, they were done, very tender.
I cut the body into 1/2 rings as well as chopping the tentacles a bit. Put it on a bed of rice with the sauce as well as a topping of sun dried tomatoes. It was excellent!! Had a great heat component to it as well as the bitterness from the lime and a dash of sweetness form the honey. A taste explosion really.
