  • What kind of sausage?

    Theres been allot of BBQ shows on tv lately. Seems like most of the places also serve a smoked sausage. Anybody have any idea of what kind it is? They look good. Also, I take it they are probably fresh and not cured since most look they are smoked with everything else around 225-250.

    Typically it's a Polish Kielbasa style they do. All pork, lightly seasoned. And also not cured, as you mention, it's cooked during the smoking process.

        I would look at the region or area on possibly what type they may be. Andouille along with a Boudin suasage in the South. Maybe beef type sausage in the mid west and so on. I ate at a place last night that had beef keilbasa as a special. Didn't have it as I knew it wouldn't be as good as what I would make.
