I smoked this pompano using apple wood. It's a pretty thin fish and one thing I hate is overcooked fish! So, it didn't take very long to smoke. I also made some coconut/jasmine rice with toasted almonds, slow roasted cherry tomatoes and asparagus, grilled cabbage wedge with aged balsamic vinegar and mango salsa. I wanted to lick the plate. So I did.
I seasoned the fish with fresh ground peppercorns, garlic and sea salt. The mango salsa was yummy. It has mango, cucumbers, garlic, cilantro, red jalapeno's an a squirt of lime jizm. (She said jizm)
The rice is jasmine rice sauteed with saffron threads, garlic and onion then I opened a can of coconut milk but didn't shake it so I could scoop off the cream to make a ginger/horseradish sauce which is obviously not shown in the picture because I am a douchebag. So, I used the coconut "water" along with a little chicken broth to simmer the rice in.
Slow roasted the veggies in a 200F oven for 2 hours. They were seasoned with olive oil and after they were done a light sprinkle of pomegrante balsamic vinegar. I think I covered everything. You love me now don't you? You want to hug me, you want to kiss me....
