  • Alder Smoked Steelhead

    Hello Everyone

    I did 3 Steelhead for a buddy of mine they turned out great he called me on Tuesday and asked if I wanted to smoke some fish for him I said sure he brought over 3 nice ones 2 where about 15 pounds and one was about 8 pounds really nice fish for this time of year
    Friday I got off work two hours early so I could get started smoking these baby's I just used a basic salt brine on them all my salmon and steelhead are done this way been doing it this way my whole life
    So i filleted the fish and salted them down and cut into chunks fired up the smoker and smoked them with Alder for smoke they turned out pretty good here is a pic the only pic i got took the pic in the smoker and placed camera in my pocket and forgot about it must be getting old

            Great lookin fish. I don't think I've caught that much in a lifetime. Sounds like a pretty traditional approach to them also.

                    Yes just salt a good heavy coat of rock salt for 2 hours rinse off and place into smoker with Alder I think steelhead are the best fish to smoke they are always moist and have a nice flavor to them

                      Very nice.....Is there a way to get a broke down direction from you on your method of smoking fish (brine,temp,how long) I sure am looking for a good recipe that matches my grandpas.

                      I guess I didn't read far enough I see you explained it a little more...thx !

                      but next question. what do you do with it after smoking it. My grandpa would can salmon after words, do you just vacuum seal them?????

                        you got one lucky buddy there Huey... hope he takes ya fishing in return. have only done it a couple times, well for steelies that is. and got to love the battle they put up. nice job buddy!!!

                          what do you do with it after smoking it. My grandpa would can salmon after words, do you just vacuum seal them?????

                          I usually vac seal and freeze what i dont eat right away if I am canning fish I do the same salt for 2 hours and place into the smoker and smoke only for 2-4 hours just long enough to get them nice and smoky usually when the skin peels off easey is when i pull them out and get them ready for canning

                            I don't know why, but I have never smoked fish. I have wanted to but just hasn't happened, need to move that higher up on my bucket list...

                              Ok next question is how would you can yours....My grandpas seamed to have a liquid in it. I wish I could ask him but he passed away long before I was born. But I was lucky enough to have the last jar of his salmon. again thx
