I have a freezer FULL of vension and with the new homemade smoker runnin and my first smoked dinner out of the way its time to look into jerky...I LOVE the spicy , smoky ,semi-hot flavored jerky..not the sweeter teriyaki crap..YUK..I have a lot of oak to burn up so that will be the the smoke of choice. Possible Hickory if i can get my pops in the South to send some my way. ANYWAY....anyone have a recipe for such a flavored jerky? Im new to this so type slow LOL..also where to buy the TQ? Thanks guys!

Some Publix stores carry TQ, Butcher-Packer has it online, any meat houses by you? You can use Prague/Cure# 1 as well. Here is a recipe I have used several times after someone pointed out to me the Mad Hunky rub makes a good seasoning for jerky. It is modified for use with TQ from this link...
5 pounds lean & clean trimmed venison
25g Tenderquick
30g Mad Hunky rub
For spicy 10-15g Smitty's pepper spice, or ground red pepper
.5 cup red wine
