  • Turkey and Deer Jerky!!!!

    I had a Turkey breast in my freezer and I got my deer back from the butcher today so I took my tender loins and sliced them thick. Now I know that most would not use those for jerky from the deer but I like thick cut jerky and these are so tender that I can cut it extra thick...

    Also sliced up the Turkey Breast little thick as well...

    Using an apple flavored seasoning thats for turkey on both of them. The kids always bitch that my Jerky is too spicy so gonna try something sweeter this time...

    Will smoke tommorow and finish it on my dehydrator..More pics to come

    Turkey jerky huh? Looking real good. Post up your tiramisu recipe if you are willing. I really like it, but don't make it often. Can't find lady fingers around here though, so end up using sponge cake. Tried a "quick and easy" recipe for it that uses Khalua. It might be quick and easy but it ain't cheap, used most of a bottle, don't know what I was thinking there

        I have made the "T" with Kaluah soaked biscotti. It works :{)

          Heres the cake recipe...I used the substitute for the cheese and it was great. This does take Kaluha and I paid 6 dollars for a small bottle and could make two cakes at least with it...I also made two coffe flavored layers instead of one...Its fairly easy and is awesome cake

          Ingrediens

          mascarpone substitute- 2pkgs cream cheese blended with 1/2 c heavy cream and 5 T sour cream
          CAKE:
          1 (18.25 ounce) package moist white cake mix
          1 teaspoon instant coffee powder
          1/4 cup coffee
          1 tablespoon coffee flavored liqueur

          FILLING:
          1 (8 ounce) container mascarpone cheese
          1/2 cup confectioners' sugar
          2 tablespoons coffee flavored liqueur

          FROSTING:
          2 cups heavy cream
          1/4 cup confectioners' sugar
          2 tablespoons coffee flavored liqueur

          GARNISH:
          2 tablespoons unsweetened cocoa powder
          1 (1 ounce) square semisweet chocolate
          Directions
          Preheat oven to 350 degrees F (175 degrees C). Grease and flour 3 (9 inch) pans.
          Prepare the cake mix according to package directions. Divide two thirds of batter between 2 pans. Stir instant coffee into remaining batter; pour into remaining pan.
          Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. In a measuring cup, combine brewed coffee and 1 tablespoon coffee liqueur; set aside.
          To make the filling: In a small bowl, using an electric mixer set on low speed, combine mascarpone, 1/2 cup confectioners' sugar and 2 tablespoons coffee liqueur; beat just until smooth. Cover with plastic wrap and refrigerate.
          To make the frosting: In a medium bowl, using an electric mixer set on medium-high speed, beat the cream, 1/4 cup confectioners' sugar and 2 tablespoons coffee liqueur until stiff. Fold 1/2 cup of cream mixture into filling mixture.
          To assemble the cake: Place one plain cake layer on a serving plate. Using a thin skewer, poke holes in cake, about 1 inch apart. Pour one third of reserved coffee mixture over cake, then spread with half of the filling mixture. Top with coffee-flavored cake layer; poke holes in cake. Pour another third of the coffee mixture over the second layer and spread with the remaining filling. Top with remaining cake layer; poke holes in cake. Pour remaining coffee mixture on top. Spread sides and top of cake with frosting. Place cocoa in a sieve and lightly dust top of cake. Garnish with chocolate curls. Refrigerate at least 30 minutes before serving.
          To make the chocolate curls, use a vegetable peeler and run it down the edge of the chocolate bar

            The venison gods will be angered by this. haha Just kidding. I always use the roasts from the back legs and slice them thin with my slicer but I have though about using tenderloins before since we have so many of them in the freezer but ours are already butterflied out so that wouldn't work so well for slicing. I'm looking forward to seeing how this turns out. Have you used your smoke then dehydrate method before? I have been thinking about doing that on my next batch but I didn't want to mess with cleaning up both the smoker and the dehydrator so I figured I would either do one or the other. I have never smoked my jerky but plan to try it very soon.

                Jerky is in the smoker for about an hour now. I put smoke to it 30 minutes after I put it in. Ran Temps at 120 for about 30 minutes to dry it a bit and then put the Hickory and Mesquite to it. Only gonna run half basket of Mesquite and thena ll hickory. Will put smoke for about 3 hours while Im smoking my Summer sausage (diff post) then will Finish in my dehydrator..

                  Are those your dehydrator trays? If so do you have any issue with them getting clean once they have been in the smoker or don't they get stained very bad?

                    Yep those are my dehydrator trays.. The first time I used them in th esmoke house I was sure they would turn brown and never be able to use except in smoker again...Was not the case..They ahve been through smoke house 10 times or so and last week I dehyrated some apples and they had no smoke taste. Just wash in sink and thats it.....

                      Jerky is now in the dehydrator. I gave it 2 hours of smoke. It has an awesome color on the Venison. Time will vary in the dehydrator as it is all different thickness. I personally like it that way. Some time want a thick piece sometimes thin so just I just cut it up.

                        Jerky is done!!!!!!!
                        I did mess this one up a bit..Too much going on at once I think..I over dried it some so its a bit crunchy on the thinner pieces. Its on the counter top to rest for few days in open air so that will help some..

                        All in all its very good jerky. The Hi Mountain apple blend for Turkey is very good though not sweet like I ahd expected but none the less good on both the turkey and the deer..

                        You guys should try the turkey Jerky when you get a chnace. I really like it and if can catch the turkeys on sale as I did its not so expensive either...

                        2 hours smoke and finsihed in dehydrator
