  • Cold smoking vegetables?

    Greetings!

    Well, it's going to be a few weeks yet for our temps to get above "thawing". Long range forecast has us maybe into the upper teens next week. Hopefully, no snow and I can finally get to use my new WSM for some meat.

    Thinking ahead, though...

    Last summer I smoked a few different veggies. Most turned out well done, shall we say. Especially the asparagus. I finally got that to turn out good, but it took a few tries. This was all hot smoking.

    I was just thinking, with temps in the 30s and 40s, maybe I could cold smoke some veggies for heating later. I really loved the final result of smoked asparagus, but I eat a fair number of different veggies and most are better raw. But, I want the smoke flavor.

    Has anyone ever tried this and did it work? I have an AMNS coming soon, so producing the smoke with little heat won't be a problem.

    I have not tried this... I am hoping someone can answer you though its a great question... sorry I wasnt any help..

      I can't see how they wouldn't benefit from a little smoke.
      I've done Butternut squash before that was used in a bisque, turned out real well.

      Have not tired smoked Asparagus. We grow a boatload of it in the Spring. Might just have to give that whirl.

        If you steam them slightly first to open up the outer skin's porosity a little they will take a good cold smoke from the AMNS.

        When smoking Asparagus are you peeling it first? Most people don't realize how much better asparagus is if you just peel it first.

        Carrots need a pretty hard steam to take on smoke.

        Of course if you want a full crudite platter and don't want to mess with trying to smoke them without forming the creosote you can get a spray bottle with liquid smoke and hit them a spritz or two a couple times letting it dry between applications.

          kinda hard to fathom that one Bob, being how good it is just the way it comes from the garden... guess i would be savin those peelings for another dish then...

            I think I would just use smoked salt or smoked paprika or chili powder, or smoked olive oil.
            Let us know if you try it.

              Never thought it did much personaly considering the texture change...I have cold smoked many a batch of veggies for salsa when cold smoking my peppers etc..

              Most times i felt it was negative effect since i like me veggies the way day are.....Fresh and Natural.....

                Well...I've done onyuns...then whack em all up & in a container in the fridge....peppers & all them...rice & spaghetti...N' salt...best i've done so far.

                  Thanx everyone. Lots of great info.

                  I had never thought of peeling asparagus. I will definitely try that.

                  Steaming them a bit first sounds like a great idea.

                  Some would end up in salsa or otherwise cooked, but most would not.

                  I thought about smoking some spices. That also sounds great. Salt, though, is not really an option for me. I use a little, here and there, just don't tell my doctor.

                  I'm hoping to really liven up my salads and sides.

                    Here is an old post from a while back. I cold smoked veggies to make salsa. After a couple days in the fridge it got even better.
