  • New Dutch Oven . . . Now What??

    Ann got me a new Dutch Oven for my birthday.

    I don't know anything about the brands, but here are some pics.









    Since it's got a coating, I don't have to season it, so I guess I just need to cook something now.

    Anyone here got any great DO recipes for a maiden voyage?

        Pollo En Pulque

        Drunken Chicken

        1 to 2 T. olive oil

        1 small white onion, peeled

        3 cloves garlic, peeled, minced

        4 chicken breasts with skin on, rinsed, patted dry

        4 leg quarters with skin on, rinsed, patted dry

        1 C. medium-dark beer

        1 C. chicken broth

        1 large very ripe tomato, washed, diced

        1 pierced fresh jalapeño or 2 pierced serrano peppers

        2 dried allspice berries, crushed

        1 small piece soft cinnamon

        Kosher salt

        6 red potatoes, quartered, or substitute 10 whole small potatoes

        Preheat the oven to 375 degrees.

        In a Dutch oven, heat the olive oil over medium heat. Add the onions and garlic and sauté until tender, 3-5 minutes, place the chicken on top. Add the beer, chicken broth, tomato, jalapeño–o, allspice berries, cinnamon and salt.

        Cover and bake 30 minutes. Add the potatoes and bake 30 minutes more. Uncover and bake 15 minutes or until browned on top. Serve with white rice.

          Sounds good, Bob, I'll give it a whirl.

          One question though . . . I didn't see a quantity on the Kosher salt. Do you just salt to taste?

                  Chicken Marsala With Peppers
                  6 Chicken breast; 5-6 Oz., skinned & boned
                  Olive oil as needed
                  1 1/2 c Marsala Win
                  1 1/2 c Fresh mushrooms; thinly sliced
                  1 c Sweet red pepper; juliened
                  1 c Sweet yellow pepper; juliene
                  1/2 c Green onions; sliced, both white and green parts
                  2 Cloves garlic; minced
                  2 3/4 c Canned chicken broth
                  1 tb Lemon juice
                  1/2 ts Dried oregano
                  1/2 ts Dried basil
                  1 ts Salt
                  Fresh ground black pepper
                  1 tb Cornstarch
                  1/4 c Canned chicken broth
                  Hot cooked pasta; drained


                  Cut chicken into strips; set aside. Add olive oil to a Dutch oven; place over medium-high heat until hot. Add chicken strips, and saute until tender. Remove and set aside. Add wine to Dutch oven, and bring to a boil. Pour over chicken. Add more olive oil to Dutch oven; heat until hot. Add mushrooms and next 4 ingredients. Saute until tender. Add 2-3/4 cups chicken stock and next 5 ingredients. Bring to a boil. Add reserved chicken mixture and return to a boil. Combine cornstarch and 1/4 cup chicken stock. Stir into mixture in Dutch oven. Return to a boil and boil for 1 minute, stirring constantly. Serve over hot cooked pasta with green salad and plenty of sour dough bread.

                        Sweet...Now I just want to see one of the recipes from BB or BM above, out of that thing shortly with some pics - they sure sound good!

                          Hey Bud, mix some garlic powder and some lemon pepper with a softened stick of butter then stuff some under the skin of a large roaster chicken. Save some to rub on the outside of the bird too. Roast for approx. 1 hr at 375º or until it hits 165º. Birds cook great in cast iron.
