  • More Pulled Pork Enchiladas

    Got to enjoy some of my efforts from the other day's smoke today.
    Picked up a bag of masa flour and made some tortillas and some homeade enchilada sauce, I just couldn't get my tortillas very thin on the account of my dang back so they were a bit thick.
    These things were really good though.

    looks good......the tortillas look fine to me. with them being a little thicker they seem like they would have a little more "bite" to them.

      look pretty dang good Lee, have made your sauce and used it on pulled bisky enchiladas and is great stuff...

      sometimes you should do a post on the tortillas and mebe a recipie... everything i ever made that i got from you been good stuff. when the points police allow me...

        Thanks Rob, they were pretty good thick like that, just wanted to crack alittle when rolling and tasted like a tamale, which is a good thing.

        Erain, I just use that Masa flour. All you do is measure 2 cups out and add 1 1/4 cup of warm water. I use a make shift tortilla press by taking a ball of dough and placing between waxed paper and press down while kinda pivoting a pyrex pie plate. It works real well for the flour tortilla. Just have to carefully remove them using a spatula sliding it in about every 1/4 hour till you can lift it off.

              Looking good I grew up with the nieghbors homemade torts ... well worth your efforts. On the enchilada sauce..did you use dried chili's and reconstitute? And which chili's did you use.. asking cause I like'm and canned sauce is ok ...but rather have H/Made

                    Sorta use dried chilis, in the form of chili powder. Heres the recipe. Starts with a roux made from oil, flour and chili powder.

                    HOMEADE ENCHILADA SAUCE
                    • 2 tablespoons vegetable oil
                    • 2 tablespoons all-purpose flour
                    • 2 tablespoons chili powder
                    • 1/2 teaspoon ground cumin
                    • 1 teaspoon salt
                    • a pinch of cayenne pepper (optional)
                    • 1 cup tomato sauce 8oz. can
                    • 2 cups water
                    • 1/4 teaspoon garlic powder
                    Directions
                    1. Heat oil in large 2-quart saucepan; stir in flour and chili powder cook for 1 minute.
                    2. Add remaining ingredients bring to a boil and simmer for about 10 minutes
