  • Grilled Lobster Tacos

    Well, tried something for the first time last night, grilled lobster tacos. We love fish tacos so it seemed like a natural extension. I grilled 4 small tails using a compound butter. I diced them up, added diced cabbage with EVOO, KS, Lime juice and BP. Threw on some diced japs, sliced avocado as well as a splash of Sriracha sauce. For mine, I over did it on the heat a little. For the rest of the family, they were excellent.

    We also had some white rice with a lemon infused vinegar from Whole Foods. I absolutely love that stuff on many things.

    Lastly, some sliced avocado, some balsamic vinegar and some KS. After all was said and done, it was an excellent meal. The kids even had seconds.





    And since you can't really see the lobster meat in there, I took a late picture of the shells for proof. Might be a first posting a picture of something from/in the garbage can,

          Sorry Rich, I appreciate the vote of confidence.

          It's just been one of those years. Kids getting older, sports left, right and sideways, ahhh, you know how things get. Hopefully, this summer things will slow down a bit and I can pay more attention to the smoker.

          At this point, that ain't happening until mid June at best.

          All that said, things are good overall but as far as my smoking buddies, it's been hard to keep up, sorry

              Great tacos Pete. Big fan of the fish also. Lobster just sounds that much better. Nicely done as usual. I'm with Rich, we need more of your posts.

                  Rich, I'm behind the power curve. I haven't even thought about Smitty's yet. Hell, I just finally got my peppers planted last weekend . Been cold out here this year and a hard freeze is still not out of the question. We had 2' of snow in the moutains last week. So, it will be a short season.

                  All that said, I appreciate the offer. I can send you some original stuff in the fall as a thank you Came up with a great sauce last year but can't get those peppers this year. But, I can work around it I think

                        I agree, excellent post, those tacos look fabulous.

                            Taco sounds and looks wonderful. Prolly be good with crab too. I'm with Dave, can't get wrapped around the KS thing.
