  • What's your go-to hot weather meal?

    When it gets downright nasty butt-crack sweatin' thighs chafing hot, what is your go-to meal to try and beat the heat?

    It's nasty around here for the next few days and I'm open to suggestions.

    Last night I decided on an antipasto platter with some cold cuts and leftover chicken, olives, peppadews onions and lettuce etc.



    Looking forward to hearing your ideas on a beat-the-heat meal.

    I feel ya! Jersey got the same BS hot heat humidity going on!

    Great looking platter, would love to slap all them ingredients on a hoagie roll and go to town

    Thinking about a go-to dish for the hot days and besides cold ribs and other cold BBQ I don't have too many.
    Love a nice fresh tomato eaten like an apple, little salt and good to go. And the garden hose to rinse ya off!

        What we do isn't too far off from that dead sexy antipasto you got there. When we don't feel like heating up the house or getting bogged down with a heavy meal we usually grill some chicken breast or fish and make a big salad with it. Satisfying without all the bleagh!
        I'm in with FIU though. That platter would make a whoop ass hoagie for sure!

          Mine is lettuce wraps... Cold, Crisp, easy to make... You can use almost any leftover smoked meat.. Pulled pork, brisky, smoked fish.. And my favorite.. Smoked Chicken..

          Here's my recipe for the chicken salad.. All you need to add is some fresh crisp romaine lettuce..




          2 C's chopped smoked chicken
          1/4 C chopped celery
          1/4 C chopped green onions (stalk and all)
          1/4 C chopped bell pepper
          1 small can of black olives chopped
          1 to 2 TBS dill pickle relish (this is to taste, add more if you like)
          2 hard boiled eggs
          1 fresh or pickled jalapeno fine chopped
          1/3 to 1/2 cup of Mayo (Not Miracle Whip) as needed
          Few squirts of mustard (To your taste)
          Salt & CBP to your taste


          Mix all ingredients except the chicken in a bowl.. Adjust to your taste.. Then fold in chicken when you are happy with the flavors..

          Cover and let set in the frig for a few hours for the flavors to meld..


          Everything chopped and ready to mix..





          Mixed everything but the eggs and S&P...






          Fold in the Mayo, Eggs, and a bit of Mustard we are ready for the frig..

            That is some mighty fine looking yardbird salad.
            Some bib lettuce to wrap it in and you're golden...great suggestion.

              lol Actually curry from our neighbours !
              God they brought round a chicken curry yesterday that had me sweating for about an hour.
              You see after eating something like that - the air temp always fels cooler :-) Plus it makes you sweat which is your natural cooling system - so yeah, really hot curry

              Dunno guess we don't really discriminate that much.

              probably eat more dishes with salad.

              I guess it doesn't get butt crack sweatin' hot that often over here

                      Good Looking Chick Salad Tex.

                      We will do a big salad. I'll have a chef salad with eggs and diced BBQ and Mrs. Engineer will have hers without meat. Of course we whore them up with olives, pepperoncini, fried onions, sunflower seeds or pumpkin seeds, parm cheese, etc, etc. Makes a good meal.

                      Or, we will make smoothies and have some popcorn while we watch a show.

                          First that looks great Dave, and Ken thanks for the recipe. As for mine I would say it is a new one for me that I got from a cook book just last month. It's a hungarian cucumber salad with vinegar and sour cream in it. Man is it refreshing.

                              I'm with Ken on the chicken salad. I love that stuff. A good, cold pasta salad is always refreshing. I also love watermelon, basil and fresh mozzarella. You can't beat a good sub with lots of cold cuts and fresh tomatoes. Mmm....

                              It's hot and humid here in Georgia. The sad thing is we haven't had any rain to speak of in weeks. The farmers are hurting something aweful. You can expect cotton prices to soar as many of them can't even get a stand and may resort to growing soybeans. I guess I better get out there and do a raindance.
