  • 4th of July smoke

    I know it's early but i'm getting a jump on BBQ for our family reunion next month.

    Smoking up 50 lbs of butts today. I plan to get it in finishing sauce and freeze it. Save me from working so hard the day of the reunion. Any tips on freezing? I've frozen some in heavy duty zip locks but was thinking a plastic tub might be better? I'm going to ru out to the store today to see whats available. I have plenty of zip locks if that is the best route.

    Will take some pics and post. Hopefully I'll get er up to temp soon and catch a hr of sleep before getting the boy off for bis last day of kindergarten.

    I usually vacuum seal mine without the sauce and add that when I serve it....but that is just because liquid screws up the sealer.

    I see no problem at all with using the ziplocks and saucing it first. Good luck, and take some pictures for us at the reunion!

      Dang Cuz! You're not playing are ya?

      I REALLY like vac packing and then boiling the bags, I've had ok luck doing that w/ zip tops. Wish I'd known you were doing it, I would've let you borrow my sealer!

          Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
          My best asset however is the inspiration from the members on this forum.

            I'd use vacuum seal bags and skip the finishing sauce until it's re heated. "Tends to make it mushy" if you add it before and freeze...

                Zeekers right...the vinegar can have a bad effect...I would wait to sauce...
                Whatever bags you use just get all the air out first...

                  Cat's are right on advice...if'n ya vac seal with liquid...jack a few paper towels in front of yer suckin...the moisture will run to it & the chow will hold. Be nice that you gettin them folk's on a gig!

                    Well I put some finisher on it, I've been doing some that way for my own consumption it is good for me. Maybe it won't be mushy. I took some pics and will post them I have some mobile ones on fb. Will get some on here tomorrow.

                    I found some ziplock freezer tubs at ollies 2 for 2.50 so I used those. Well see how it goes.

                        as promised her are some pics of the smoke

                        first (2) rubbed and in my storage bag, not to be confused with a trash bag they are multi purpose.


                        high tech rubbing station, a patent has been applied for.


                        tying up the storage bag to put it back in the ice chest


                        rub station re-loaded


                        scoring the fat cap


                        the dog was licking his chops


                        applying the rub with my high tech shaker, an old spice bottle.




                        after 10 hrs on the smoker


                        on the chopping block


                        damn fine smoke ring if you ask me a little doner than i usually cook, i like a medium and good chop consistency but it was a hectic day.

                        i left the other (3) butts on the smoker while I chopped the first ones, which as i mentioned were doner than i typically go for so these got to a true pull if not further, i had a hard time getting them off the smoker. lost part of one to the ground it was falling apart. it'll still eat good though


                        putting some sauce on for the final part of the smoke




                        of course the temp dropped on my smoker and i needed to get the ribs done for the crowd of people waiting to eat, so i threw them in the oven for 30 minutes at 350degrees. they were awesome


                        again a very nice smoke ring


                        after dinner i enlisted some help to pull/chop the last (3) butts which made it go a lot quicker




                        it was a good day and i got plenty of que in the freezer for our reunion on the 4th

                            we gotta get some smoking time in philip. i'm thinking about getting a few butts that lowes has on sale starting today 1.49/lb. have you seen them do they look good?

                            i got all this at the stock market up in concord, that place has great cuts of meat and fair prices.
