  • Grilled Orange Roughy

    We eat this once a week around here as it's such a good fish. It's naturally moist, buttery and tastes excellent. In the two fillets on the left, I coat in EVOO and then put on an orange based rub for fish. The one on the right, I put a basting sauce on, some of the orange based rub as well as some ground smoked Thai dragons. That one is for me of course.



    I put them on the grill at 400 degrees for 5 minutes each side. Very simple yet effective. Throw in some taters and steamed peas, it's all good.



    I have to try and smoke some of this in the coming months to see how it turns out. For some reason, I've never tried this fish on smoke but it's a lean fish, which is probably why I haven't tried it, so we'll see how it goes. I'll let you know when I do.

    In the mean time, if anyone has any experience with this fish on the smoker or general suggestions for that matter, I'm all ears. I know it's not like doing a fatty fish like salmon so would love some imput. Thanks!

        looking great dude...........

        i have tried smoking fish, and so far, not a big fan..........but GRILLED, sounds great..........


        let us not cry because we lost someone, but let us smile because we enjoyed their company for what time was allowed us!

          Thanks guys..it's easily our favorite fish and I've had a lot of different kinds of fish over my lifetime.

          If I can figure out a good smoke for it, all the better. Up until now, the best smoked fish I've ever had was dolphin/mahi mahi. The worst was Walleye which was a disaster but I think it was Erain who has that one dialed in.

            Nice....when Louie & I run outta fresh fish we keep a bag of Roughy from Sam's on hand. This is a do....ah hell Gig....D88de has a problem with the gig word. Gettin old I guess....not me!

                    It's a deep water ocean fish. I can cast pretty far but from Colorado, it's not happening.

                    So, I buy it.

                        Looks great. I love that orange roughy. I haven't had that in quite awhile, the flavor and texture almost reminds me of crab. I need to get to the seafood market real soon and get some of that again, along with some halibut that I also haven't had in awhile.

                          ableman thats some pretty lookin fish there! i enjoy orange roughy every once in a great while or some red snapper. these both being fish lacking in oil like a trout/whitey/salmon. pretty much the same as walleye. i would not really try and smoke them persay. foil pan with a nice amount a butter in it, some thinly sliced onions, add the fish so its laying in the butter. add your seasoning of choice. sometimes less is better. top with sliced lemons and put in smoker. leave in smoker til just starts to flake at med thickness. pull pan and let set for 10 min and fish will be done thru but not overcooked. you can also use this for pike, bass, panfish, etc. any non oily fish. is a non brined, fully cooked version best i can describe it. i derived it from a recipie called oven baked fish. we just eliminated the oven and added a little smoke to it. nice job ableman!!!!!

                            Orange Roughy is phenomenal.
                            There IS a reason you've never seen a picture of one.

                            Check out this recipe. It's a killer way to make Orange Roughy. (Below)

                            ORANGE ROUGHy - Fish Fantastic
                            “Fluffy Orange Roughy”

                            4 Orange Roughy Fillets
                            ½ Cup Shredded Parmesan Cheese
                            ¾ Cup Mayonaise
                            4 Finely Chopped Green Onions
                            ¼ Cup Lemon Juice
                            LEMON WEDGES ( OPTIONAL )


                            Rinse Fillets, Pat dry w Paper Towel.
                            Spray a 9 x 13 Baking Dish w COOKING SPRAY
                            Place the Fillets in the dish and Spray Tops w Pam
                            Place in Oven under MED Broiler for About 5 Minutes
                            While the Fillets are Cooking
                            Mix, Parmesan, Mayo and Lemon Juice in a SMall Bowl
                            After the 5 min Remove Fish From Oven & Spread w Mayo Mix
                            Then Sprinkle with the Chopped Green Onions
                            Turn the Oven from Broil to Bake and to BAKE at 350’
                            Place Fish in oven and Bake APPX 10 MINUTES
                            They are done when Opaque and Tender and Flaky.
                            (Great with Spinach as a Side Dish)

                            FANTASTIC ! THIS CAN BE MADE W ANY WHITE FISH
