  • Cheesecake-Stuffed Peaches

    Found this recipe and tried it tonight. OMG!!! Even my neighbor ate one and said "the flavors together are so great!". I thought I had read the recipe called for one 8 oz pkg of cream cheese and that is what I used and it turned out great...now that I type it here, I see it says 1/2 8 oz pkg. Next time I make this, I will use the whole 8 oz again...I saw nothing wrong with that.

    6 peaches, halved and pitted
    1/4 cup butter, melted
    3 Tbsp. cinnamon-sugar
    1/2 of and 8 oz pkg. cream cheese softened
    1/4 cup sugar
    1 egg yolk
    1 1/2 tsp. vanilla

    *Cinnamon - sugar = 3 Tbsp sugar and 1 tsp cinnamon

    Preheat oven to 350. Line cookie sheet/baking pan with parchment paper (I used foil and it worked just fine). Trim a very thin slice from the round side of each peach half so the half will stand flat on the baking pan. Dip each peach half into the melted butter to coat. Arrange peach halves, cut sides up, on pan. Sprinkle cut sides with cinnamon-sugar. Set aside.

    In mixing bowl beat cream cheese on med speed until smooth. Add sugar, egg yolk and vanilla. Beat until combined. Spoon cream cheese mixture into peach centers. I started with a spoonful for each peach half and then went through them again and had enough for 1/2 spoonful each the 2nd time.

    Bake, uncovered, about 30 minutes or until lightly browned and softened. Serve warm or at room temp.

    I put caramel sauce over it with some chopped pecans.

                Simply outstanding..... Wow.....
                Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.

                  WTF??? That sounds absolutely amazing Becky! Gonna give points, but said I gots to spread the love. I guess I gave you too much loven! Peaches are coming in here in Jawja, so I'll get going on some peach cheesecakes meself! I bet it tasted awesome with the caramel sauce too! Yummmm. Just beautiful.
