pulled vs shredded?

  • pulled vs shredded?

    So I was perusing the meat section at my local supermarket, and came across these tubs of "pulled" meat products.



    Nothing special there, but one of the tag lines on the tubs caught my eye. "Always pulled, never shredded". Got me wondering what exactly is the difference? To they seem pretty much the same thing. Maybe a little more course on the pulled than the shredded?

        Perhaps shredded means chopped?

          shredded would suggest a finer stringier meat that is probably cooked to a slightly higher temp.

          After the first batch of pp I did at around 200 ish - which did fall apart but was quite stringy. I started pulling it at around 190-195. harder to pull but you get more coherent lumps of pork and not much of the stringy stuff.

          maybe that's what they mean

              For me, shredded refers to getting two forks, and going after a smoked butt. Stabbing a hunk of meat, then using the two forks to "shred" the meat.

              Pulled pork is just that. Grab a hunk of meat with your hands, and "pull" it apart. Like others stated, pulled would have more "clumps" or "chunks".

              Shredded = no clumps or chunks, but "shreds" of pork
              Pulled = shreds of pork mixed in with clumps or chunks.

              Clear as strained pork juice, huh.........

                  the other thought that came to mind was "mechanically" shred and "hand" pulled but i cant see anything like that on the label

                    Sounds like it's all the same thing to me. How much does a package of PP of that size cost? I was at my local grocery store the other day and they smoke their own meats and they wanted $35 for a package not a whole lot bigger then what those look like. Now that is just crazy.

                      I think they were like $7 or $8. Don't know what size, but i'd guess around 10 or 12 ounces, maybe a full pound. They weren't too big.

                          I was watching a show one night that showcased a BBQ joint. they discussed pulled vs. shredded. the joint on the show "shredded" their pork with knives into a relatively fine texture. they also added loin and "extra rib meat" into their shoulders to give a different flavor profile. they said they had to "shred" it because they could not pull the loin apart and with the knife action, it helped mix everything together better. I could have sworn it was a bigger place in KC, but i can't remember for sure.
