  • Hunkified Chex Mix

I like about 20% of what's inside regular Chex Mix. Whenever I buy a bag, I pick out the good parts and end up throwing the other 80% away.

So, I decided to mix up some of my own. And since I had the Mad Hunky Rub, I used that instead of the suggested seasonings.

Mixed all that dry stuff up:

And discovered I misoverestimated how much dry stuff I needed. I had mixed way more than would fit into the bowl:

    So, I started un-mixing it:

When I got all that separated and back in the proper containers, I got to mixin' up the wet stuff:

Zapped the mixture in the microwave for 5 or 6 minutes, stirring haphazardly and it came out looking like this:

Then I dusted it with another layer of Mad Hunky and some of the smoked "popcorn salt" I made recently.

This version of Chex Mix is freaking delicious!

So, I broke out the Tito's and celebrated my success!

    Cheers!

Hope you enjoyed the Hunkified Chex Mix view!

    Thanks for looking in!

That's funny. I agree with you, I like to make my own, that way I can powerhouse the good stuff. I don't necessarily like a bunch of pretzels, and it always seems that when I buy chex mix, I get a bag of pretzels with a few other tasty tidbits in there to tempt me. I load it up with gold fish, cheeze crackers, cereal and cheerios...man I love the doctored up cheerios. Ever notice how they shrink dramatically when you hit them with the butter and spice mix and run 'em through the oven? What kind of magic is that?

Once I tried to smoke some...I put it in for about 15 minutes trailing thin blue out the chimney...son of a bitch, it was like licking an ashtray. I think because of the huge amount of surface area and in the buttered state, it just sucked in the smoke. If I could control it better it would be a good idea. Maybe I will try the dreaded liquid smoke

So what's up with the smoked popcorn salt?

Thanks, Pandemonium! I appreciate the comments, and points!

I just mixed up 4 or 5 teaspoons of Mad Hunky rub with a melted cube of butter and 4 tablespoons of worcestershire sauce.

The Chex Mix recipe calls for 6 Tbl. of butter, with about 3 tsp. of seasonings. I found that that doesn't make enough sauce, so I upped it to a whole cube and replaced the suggested seasonings with MH rub.

Thanks, Fishawn! You'd win that bet for sure! This Mix far exceeded my expectations. Next time I'm asked to bring a snack to a party, I'm making up some of this stuff.

Thanks, Richtee! When I was mixing it up, I was thinking you, or someone around here, had probably already tried MH on Chex Mix. I'm thrilled I was (possibly) the first.

As for the goldfish, I didn't know if I wanted cheese flavor in the mix, so I opted for the new Saltine version (just the crackers, without the cheese) because I wanted the dominant taste to be the MH.

Thank you, SMOKE FREAK! I appreciate the comment! Maybe smoking the nuts before adding them to the mix would work, but I'm not sure about the how the rest of the ingredients would take the smoke. Looks like BBQEngineer tried it and it was problematic.

Thanks, SmokinOutBack! Best idea I've had in a month of Sundays!

Thanks, BBQ Engineer! Yeah, and the pretzels that come in Chex Mix aren't even good pretzels. My favorite part of Chex Mix is the bagel chips, so I powerhoused up those Big Time.

Yes! Those Cheerios are hilarious the way they shrink down. I didn't expect that and I was shocked when I saw those little bitty o's. They are sure tasty, though!

Thanks for the warning on trying to smoke the whole shebang. I'm thinking next time I will try smoking just the mixed nuts. I bought roasted and unsalted this time. Next time, I'll try unroasted nuts and smoke them before adding them to the mix.

As to the smoked "popcorn salt," I just smoked Kosher salt for a couple hours, then ground it down to a fine powder with a mortar and pestle. I originally made the salt to go on the smoked almonds I made last week, but since I still had some on hand, I drafted it into Chex Mix duty.

Thank you, northern greenhorn! Yeah, when I saw the mention on the website that it is good on popcorn, it got me to thinkin' about trying it in a Chex Mix.

LoL! Thanks, Squirrel! It's not like I'm OCD or anything

BTW, enjoying some of it today, I'm thinking next time I'll increase the MH a bit in the recipe.

I think you'll enjoy Tito's, Squirrel. Very smooth, and, it's considerably less expensive.

It's distilled 6 times and has won a bunch of prestigious awards. All those extra distillations means fewer of the byproducts that produce hangovers. Sweet!
