I have never had the opportunity to try Castor canadensis... I did find this about them though..

Beaver meat is dark red, fine grained, moist and tender, and when properly prepared, is similar in flavour to roast pork. It is usually slow-cooked in a broth, and was a valuable food source to Native Americans.

lil rusty - sure do cant think of a time that i havent
a friend replies - dude you need to slow down and enjoy it more....

smoking beaver is clearly a sign you need to slow down.

If no one comes up with a way to smoke it... It's a rodent, right? You might try TW's Hasenpfeffer recipe... http://www.smoked-meat.com/forum/showthread.php?t=20091
                      .

Not to mention the occasional campfire

And no Brownies for dessert either.

Ate my fair share o porcupine, but never tried beaver. If Ida known they was good eatin, I'd have bagged one or two for deer camp meat every year. The bastages build their dams and flood out the cedar swamps where the deer bed down on our place.
