bbqg, jax, the arm roast is from item #1114E(per the meat buyers guide) is a boneless above the elbow roast which can also be cut into "arm steaks". i sound so smart just because i have a copy of the meat buyers guide, buck fifty on ebay!!!!!lol

to finish up the tale on this, put in foil at 160 deg. was planning on slicing cross grain kinda london broil style except thicker.

i knew i was in trouble picking up the foiled roast outa the smoker. only way of slicing that would be cool it down so went to plan B and pulled. fisishing sauce real simple, drippings from foil, apple cider vinegar, and some good balsamic vinegar.

That looks great. How would you compare it to a chuck roast, as far as fat marbling, tenderness, etc.??
