  • Bacon Wrapped Stuffed Shrimp

    So thought I would try something a little different tonight.

    Bacon wrapped Stuffed Shrimp!!

    So here is what you need for this smoke.



    4 Tbls Cream Cheese
    2 jalapeno seeded
    1/4 cup onion
    1/8 tsp garlic
    1 lime
    1/4 cup imitation crab meat
    21-25 per lb shrimp 1 pound
    avocado
    Mad Hunky

    Dip/Glaze
    pineapple juice
    rum
    jalapeno jelly
    corn starch

    First put the first 6 ingredients in food processor and combine until smooth Only use the juice of a half a lime use the other half on the avocado to keep color fresh. This will be your stuffing! (taste quite good on its own with crackers... just needs a bit more crab meat for a full out dip!!))





    Then Butterfly your shrimp



    Add about 1 Tsp +/- to the shrimp




    Add a slice of avocado



    Add a slice o crab meat This is in addition the 1/4 cup.. Guess i should have said 1/2 cup total



    Then wrap with a 1/2 piece bacon that has been dusted with the Mad Hunky using the Fish stretch method!!





    Do this about 20 times and here is what you have to start with. Then put into the frig to firm up for about 30 minutes.



    Then onto the smoker at 285* using Hickory toady!!


    Now onto the glaze/dip.



    take about 1/2 cups pineapple juice, 1/4 cup jalapeno jelly, and a 1/4 cup of run +/- and bring to a boil and add 1/2 Tbls of corn starch to thicken it up. Here boil for about 10 minutes.

    Here is what you get... 2 of these.. one for glaze and one for dip.



    After shrimp cook for one hour apply the first round of glaze. Then every 30 minutes till the bacon is the way that you like it.


    Here they are off the smoker.




    The inside shot.




    And the plated shot with some fresh corn on the cob!

    I looked at this thread 7...yes...7! times before I just broke down - and opened it.

            Wow, looks like a really tedious process but definitely worth it cause those things looked fantastic

                Holy Crap! Awesome! ! for sure!
                2 questions though. It looks like you have added some peppers to the blender? It isn't mentioned in the ingredient list? Also, if one doesn't have bourbon, is there anacceptable non alcoholic substitute?
                I rub it every chance I get!

                    Crap forgot to put that I did use a jalapeno... crap... used two of them since I have a ton of them right now.. will fix ASAP!!

                      Gonna get from me for this one.

                      How did you like the cooked avocado? I hear that is sacrilegious in some States..., and honestly have never eaten a cooked cado.

                        It kinda lost its flavor to be honest with you... It did have a nice creamy texture though that was very nice!! I would do it again though!!

                          Great stuff Brian, there's NO way I wouldn't love this. if they're there for you. Wow!
                          Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
