Fired up the new trailer rig just for a small chuckie and 1 rack of ribs but what the hay!! I have had this rig since late July and it is everything I could have hoped for and more. A few obligatory pics of the rig. These pics are from the fabricator last summer after it was built. A guy who goes by Wreckless on the Smoke Ring is one talented builder and it shows in this smoker!
Now on to the food. Wife picked up a couple of mock tender chuck roasts. New to me never seen em before but thought I would give one a try. Much leaner than a regular chuckie but I thought I would see if I could get some pulled beef out of it.
Rubbed up and on the smoker he goes...
In the event the chuckie didn't want to cooperate and things went bad I thought I better have a plan B. Tried and true St. Louie!
So while everybody is in the smoker and the football game on tv and a few adult beverages being consumed I cut up some green peppers and red onions to go with the chuckie.
Because this chuckie was so lean I was spritzing with a mix of beef stock and red wine. I only took to 140 internal and pulled him off the smoker. Introduced him to the veggies.
Created a little hot tub for the guy using a little worsy and a good stout beer!
Put a cover on the hot tub and back in the smoker it goes. In the mean time the spares were done. I did the usual 3-2-1 on these. They came out rather nice. Trying a new sauce/glaze on them and really like the color it produces!
The chuckie took a few more hours to break down. I think these mock tenders would do better being sliced rather than pulled. I added some shrooms about 15 minutes before I took it off the smoker and pulled it. Then I made myself a nice sammie!!
I think I gained a couple pounds yesterday! No sides. Just kind of snacked on the Q all day!
